I have not seen one of these anywhere else but here---they had a name for it, but all I can think of is the mud lobster---a tail like a regular lobster, but different other stuff----the meat of the tail was gritty it seemed----a cool experience but not one that I will repeat.

When you pass over the bridge on the way to St. George Island, you will likely see several boats with oystermen aboard out in the bay. Apalachicola Bay is regarded as where the finest oysters in the world are harvested
The bay supplies 80% of the nation's oysters.
