The Hotel Restaurant AKA Canyon Dining Room: It's your only choice:(
The food is passable renditions of what you might get at Big Boy or Denny's with a California twist, but the service is, to put it mildly, hit or miss.
Favorite Dish: The view if you are lucky enough to get a window table -- also the hummingbirds who come into the feeders by each window.

I visited on an overbooked Thanksgiving so its hard to judge the quality of the food based on this one experience. The dining room is a large wood-ceilinged room that gives the appearance of being cozy. Large bay windows allow for a daytime view of the mountains.
The servers, despite being obviously overworked and constantly harassed (Thanksgiving reservations were so overbooked that people were waiting over an hour for their tables) were polite and friendly. Anyone who can do that after 8-10 hours of stressful non-stop serving must be pretty good at what they do.
Since it was Thanksgiving, the food was standard fare and limited selection. I thought it was decent but not overwhelmingly great. I have to give deference here as this was about 8 at night and the hotel began serving the mass produced Thanksgiving meal at about one pm.
Given that people traveled pretty far to get here for Thanksgiving (at least that's what I was told) I'll guess that the food is usually better than average.
Favorite Dish: Again, I can't really say. I had some quesadillas while waiting in the bar which were great, so I'll have to go with that.
