Get away from the cities & see the country
America - is so vast and has so many interesting terrains and landscapes that a car drive/tour is a great way to see USA - the lakes, mountains, and no man's land!

    Albaquerque to Salt Lake City
    An amazing road trip. Hitting Mesa Verde National Park; Shipwreck; Monument Valley; Escalante NP; Bryce NP; Arches NP; etc. The drive is spectacular; the rock formations out of this world; and lodging in the National Parks is fabulous. Do avoid the summer months; the best time to go is September.

    Southern US trip in the winter
    As others mentioned, we don't really do the "mass transit" thing well here in the U.S. And I drove in the UK, so driving on the wrong side of the road is only scary for a short period of time. As it's hard to find a rental car without an automatic transmission here, the whole gear shift on the wrong side is not an issue. Personally as you've been to Vegas and the Grand Canyon already, I would say to take a trip something along the lines of flying in to Albuquerque, head up to Taos for a day.

    I would then head back through Albuquerque and head south for Carlsbad caverns.

    From there head over to San Antonio, which is a great town.

    Then on to New Orleans and to Biloxi. If you want to finish up at a beach somewhere, you are on the Gulf Coast so you could just continue on to Pensacola or Panama City, Florida.

    This trip would almost certainly fill your two weeks up without a problem and, of course, you could cut it shorter or make it longer as the mood strikes you. :-) I would plan, if doing this trip, to rent a car in NM and leave it at the airport in New Orleans, Mobile, Panama City or wherever your easternmost destination is. And then fly back to California for a day or two to rest up for the flight home.

    Considered the premiere adventure park in the country, Sea World is most famous for it's killer whales that perform regularly there. Besides that there is a wide variety of wildlife on display. A lot of the animals are trained and perform in shows which might be a moral conflict for some.

    Disney World
    Disney World is located in Orlando, Florida. The Magic Kingdom, Epcot, MGM studios are the main three sections of DisneyWorld. There have been additions like the Animal kingdom and Sports World which I have not been to yet. It is truly an American experience, but I will warn you that it is very expensive and not worth visiting in the summer because it is too hot and crowded.

    Each state has it's highlights, but overall:

    1. Visit the Grand Canyon & Canyon de Chelly in Arizona.
    2. Hike at part of the Appalachian Trail.
    3. Visit New Orleans and don't forget to visit bayou country. (But not in July-August--too hot & muggy)
    4. Sail on the Great Lakes.
    5. Take a steamboat on the Mississippi.
    6. Hike/climb in Colorado.
    7. Go to a local festival---every community has one at some time.
    8. Visit Charleston, South Carolina & Savannah, Georgia.
    9. Visit national landmarks in Washington DC and surrounding areas.
    10. Catch the local music scene, where ever you are.

    Cities to explore in the eastern US
    For a trip to a couple of major US cities, both Chicago and Washington DC could easily consume an entire week. Both have many museums, restaurants, bars, theaters and anything else you would expect to find in a world class city. Milwaukee is an interesting town and about a 1 hour drive north of Chicago. Baltimore is about the same distance from DC.

    Boston or Philadelphia could be good choices as they are also cities steeped in American culture. Atlanta, while not yet in the same category as New York or Chicago is up and coming. Unfortunately, our transit system leaves something to be desired. Charleston is a nice city (or so I hear. I've not been there in 30 years so I'm sure it has changed a bit! ) and is midway between Savannah, Georgia and Mytle Beach, South Carolina. If you were wanting to take in a bit of the southern United States, this would be a good place to consider. All three cities are on the ocean, so you would have the maritime activities and museums available as well. In the bay at Charleston is Fort Sumter where our Civil War started in 1861 if you'd like a pivotal point in American history to explore.
