Located on top of the Simon Pierce glassblowing workshop, Simon Pierce restaurant is a bit elegant but well worth the wait it may take to get a seat. They have a deck looking over the Ottaquechee River where, at night, you can watch HUGE Trout and suckerfish swim around the rocky riverbed. The menu is usually french with a Vermont Flair (Vermont cheese plates and even a Maple Smoked salmon can show up on the menu) and they have a really good wine list. Kids meals are available too and they do birthdays if requested.
All in all it's a great place to eat and you can always go browse the shops and see people handblowing glass any day of the week.
Favorite Dish: Any of their Salmon dishes are AMAZING. For an appetizer, try the Calamari if they have it and you won't be disappointed.

The exterior and huge doors make you feel like you are entering a mid-evil castle. Once inside, your senses are filled with the aroma of the wood fired oven. The chairs are built out of tree branches, the dark wood and dim lighting set you up for a very relaxing dining experience.
This place is what your senses need. The touch of the chairs, the smell of the oven, the sight of a nicely decorated restaurant, the sounds of you and your significant having conversations about the days events, and the most important is the taste. The food will have your mouth watering, and make sure you save room for the Maple Sundae dessert (oh so good).
Favorite Dish: I have many favorites at Firestones. The chicken pot pie is great, especially on a cool fall evening. The flat bread pizza's are tasty too, oh what can I say, about 80 percent of the menu is my favorite.

Along our travels through Vermont we stopped off at Quechee Gorge. There are many spots around here to take some great photographs.
