Bill's Barbecue is a regional chain of barbecue restaurants. They have mainly stand-alone restaurants, but there are some food court booths at Virginia Centre Commons and The Shops at Willow Lawn.
Favorite Dish: Minced pork barbecue, large fries (chips to my friends in the U.K.), and limeade. The limeade isn't made from concentrate, but rather from carbonated sugar water with a generous squeeze of lime juice. Sometimes, the simpler the better.The barbecue is fairly good, the limeade is great, but they don't serve hush puppies.
I'm not sure what they do to the limeade to make it such a perfect blend of sweet and tart. Imagine a caiparinha without the alcohol, and that comes close to the perfection of Bill's limeade. It's made with ginger ale or soda water or something sparkly instead of regular water, and there are huge chunks of lime in the drink. Perfecto! And the barbecue's not bad either.
Favorite Dish: You can't go to Richmond without sampling the limeadeat Bill's Virginia Barbecue.
