    The Herbfarm is nothing short of incredible. The dining experience is 3-4 hours long and rather expensive, but definitely worth the investment. The grounds of "the new restaurant" (the old one burned many years ago) are beautifully landscaped with many of the herbs grown on the company's property.

    An example of their gardens is planted just across the parking lot next to Willows Lodge.

    Favorite Dish: Everything changes for each theme. The month we visited, the theme was "100-Mile Dinner. It was so named as everything used to prepare the dinner, including the salt and pepper was sourced from a 100 mile radius of the restaurant.

    1. Stuffed Zucchini Blossom, Old Spot Ham, Caramelized Eggplant, Wood-roasted Carrot, Herbfarm Tomato served with a 2009 Venturi-Schulze Brut Naturel from Vancouver Island, Canada.
    2. Baked Shigoku Oyster, Borage Stem, Oyster Emulsion, Raw Kumanmoto Oyster served with 2012 Lopez Island Organic Estate Siegerrebe from Puget Sound.
    3. British Columbian Kombu Kelp and Smoked Salmon soup with Reef-netter lummi Island King Salmon served with 2009 Tildeo Winery Estate Viognier from Lake Chelan
    4. Roasted Moulard Duck Breast with roasted gravenstein apple, swiss chard served with 2009 Benson Estate Vineyards Sangiovese from Lake Chelan.
    5. Grilled Lopez Island Pork Shoulder with Globe basil, Yukon gold mashed and Grapeseed-fried new potatoes, Shishito Pepper, Walla Walla Onion and Baby Fennel served with 2011 Nefarious Cellars Estate Syrah, Lake Chelan.
    6. Terrine of Puyallup Valley Foie Gras & Roy's Calais Flint Corn Chips with Olympic Peninsula Saffron Honey and Shep's Milk Yogurt.
    7. Red Haven Peach Sorbet, Wood-roasted Peach, Tangerine Gem Marigold.
    8. Saleratus Waffle, Smoked Lardo, Wild Berries in Vancouver Island Balsamic Vinegar.
    9 Native Beverages with "Sweet Bits." Frosted White Currants, Strawberry Mousse with Rose Geranium, Sugar Beet Cake, Lemon Thyme & Blueberries served with Sky River Mead "Solas," from Puget Sound.
