I don't know if the gaucho's on the Feria de Mataderos are real gaucho's, but it was great fun to see them riding their horses and playing games on a horseback.
They are part of the Feria de Mataderos and start their 'performance' in the afternoon. During our visit (mid November) at 3.00 p.m.
