I don't know if the gaucho's on the Feria de Mataderos are real gaucho's, but it was great fun to see them riding their horses and playing games on a horseback.

They are part of the Feria de Mataderos and start their 'performance' in the afternoon. During our visit (mid November) at 3.00 p.m.

For more info about the Feria de Mataderos see my 'things to do tip' and the website (http://www.feriademataderos.com.ar) is only in Spanish, but it has a small map.
