SALVADOR : CHEESE-ON-A-STICK

This is a block of cheese (1 inch by 1 inch by 4 inches) on a stick peddled in snack stalls or by a guy carrying a make-shift portable tiny barbecue-pit. As you order it, he barbecues the cheese for a moment. The cheese does not melt, instead, it turns slightly brown and toasted on the outside and all gooey and creamy on the inside. Heaven when you sink your teeth in it!!! Sometimes, the peddlar has a bottle of syrup to douse on the cheese. Get it!! It is the greatest snack here in Brazil.I found it mainly in Rio de Janeiro and Salvador.

DENDE OIL IN XIMXIM DE FRANGO & MOQUECA DE PEIXE

Everybody seems to be warning everybody else about the famous 'dende oil' of the Bahia State.I was fine. No tummy rumbles. In fact, food in Bahia is one of the BEST in Brazil. But do ease up on the oil if you are sensitive to such things.XIMXIM DE FRANGO : A wok of chicken cooked in some sort of curry or stew with shrimps and various veggies, swimming in dende oil. Delicious.MOQUECA DE PEIXE : A wok of fish meat cooked in some soft of spicy stew, swimming in dende oil. Super delicious too.Below is a site with their recipes.

OLINDA : TAPIOCA

Tapioca is a snack made by mixing the powdery tapioca and shredded coconut. The ladies fry the tapioca in a small pan and somehow, the powders stick together after a while, forming a tortilla shape. They add butter and sprinkle some coconut. Then, you can select your choice of sweet - chocolate, marmalade, banana - or salty - meat - fillings and then, it is folded and served warm.You can find many stalls setting up from 2pm onwards at Alto da Se, at the top of Olinda, in front of the Cathedral da Se.

FEIJOADA BUFFET

Saturdays is 'feijoada' day and many restaurants hold 'feijoada' buffet where for a fixed price, you can taste all the black murky beans with meat of all sorts cooked in clay pots.Feijoada is prepared with black turtle beans, with pork or beef, and sometimes using the ears, feet, tail, tongue... It is stewed slowly in thick clay pot into a black or dark brown, purplish thick glob.I am NOT a fan.It was told to me that during the slavery days, the Africans collected discarded pieces of pigs' ears, tails, etc... from their masters and prepared these meat er... products with cheap ingredients like beans and rice. Soon, it caught on amongst the low class and high class as well, becoming the 'national dish' of Brazil

Brasil's Beer is not to sneeze at. fine brew and one of the biggest beer producer is Brahma..which I like very much. and today, I shopped where I seldom do shop here in Christchurch, can't believe my luck, or is it faith. the Supermarkt sold Brahma, the world has realy shrunk, import/ export into far away places. course I bought a six pack, which cost around $US7.- bucks, I know thats a bit on the expensive site for NZ, the local brew half the price, but I didn't care.....and I enjoyed it very much

Most brazilian restaurants: Sucos and açucar (Fresh Juice and Sugar)

The availability, diversity and affordability of freshly squeezed juices (sucos) are one of the most delightful things about Brazil - truely unique. Howver, many places will make your fresh juice with lots of sugar in it. To avoid this order your sucos by saying 'sem açucar' which means without sugar. You can add enough to your liking from the sugar bowl on the table. My favorite sucos are:-abacaixi (pineapple)-manga (mango)and-mamão
