Pubs on Caracoles street (mainly the one on the corner of Caracoles and Toconao) have live (and rather loud) music (so this is not the place to sit and have a conversation), and so have the cluster of places around this corner, with much or less volume.
In summer, it is said that things get crazier and louder, but mainly confined to the town’s centre, as the outskirts are still the “domain” of locals, who are quieter and have a different way to face amusement (although the San Pedro feast is a quite noisier and hectic local celebration, on June 29th).
In any case, walking along Caracoles is a good way to find something that may taste you...even if that is just a night in the desert outskirts, looking at the Milky Way.
