Hostería Las Torres: Great food in the middle of nowhere

The hosteria, pictured here, had a buffet for US$25 that included just about anything you can think of, including great wine and great desserts -- these chefs were serious about their work. The price seemed expensive, but I ate there after my hike, so I had not had a good meal since six days prior at El Mercado and I ate about six days' worth of food!

Naturally, as Chile has such a long coast-line, one MUST try the seafood here.Congrio and corvina are different types of fish, cooked in various methods, oftentimes baked, and they are fresh and fantastic.

CAZUELA DE AVE

When I made another attempt to ask some Chileans what is a local dish, they told me 'Cazuela de Ave' which is basically 'Chicken Soup'.There are large pieces of chicken, potatoes, rice, onions and peppers swimming around the clear stew.In ARICA, there are many 'set-lunch' diners along the streets and 'Cazuela' is usually served as a starter.

SUPER PANCHOS

In response to my question to what would they recommend me to try for a local cuisine, some Chileans excitedly suggested the 'Super pancho' (Super hot-dog). Hmm... maybe they do not have much of a local cuisine, I wondered.It's HOT-DOG?!!?!?!They shook their heads and gravely imparted to me that the Chilean's 'Super pancho' is special - it is topped with EVERYTHING - egg, onions, tomato, etc...Right.

Empanadas in Chile are also meat pastries but shaped slightly different from those found in Argentina.Here, they are bigger and shaped like a triangle. The contents have less varieties here, usually meat with raisins, olives, onions, peppers.

Empanadas can be filled with: meat, cheese, seafood, shrimps-cheese, large oyster-cheese, mushrooms, chicken.Here I'll give you the recipe of the meat empanada, the most popular, specially during September, when we celebrate the Independence day.Ingredients: (10 servings)Dough:1,1/4 kilo flour (5 cups)60 grs baking powder (2 tsp)25 grs salt (1 tsp) 125 grs lard (1/4 lb)250 milk (1 cup)Filing:4 onions chopped 125 m oil (1/2 cup)50 grs paprika (1 tbsp)1/2 k ground beef (1 lb)salt, oregano, pepper1 bouillon cube3 eggs Dough Preparation:Sift flour, baking powder and salt together, add melted lardand hot milk, mix little, mixing well, but not kneading. Letstand for 20 minutes and then roll it. Cut in circles aprox20 cm diameter, and put in each of them one tbsp stuffing,one olive, 2 o 3 raisins, one slice of hard boiled egg,moisten the edges and fold shapping them as triangles orrectangles,...

Caldillo de Congrio (Cod soup)This is one of my favourite dishes :o)Do you want the recipe?, here we go....(4 servings)2 pounds cod, cut into 4 steaks2 carrots, scraped and thinly sliced2 cloves garlic, chopped (optional)1 cup dry white wine2 pounds small potatoes, peeled and thinly sliced Freshly ground pepper4 cups fish stock1/4 cup lemon juice2 medium onions, halved and thinly sliced1/4 teaspoon oregano4 tablespoons olive oilSaltPut the fish steaks into a casserole, preferably earthenware, large enough to hold them in a single layer. Season with salt and the lemon juice. Cover with a layer of carrots, then a layer of half the potaotes, then the onions and garlic, and the rest of the potatoes. Season with salt, pepper, and oregano. Pour in the wine, fish stock, and olive oil. Bring to a boil, reduce the heat, and simmer until the potatoes and carrots are tender, about 30 minutes....

Instead of describing Restaurants here, I'll suggest typical Chilean dishes, as this page is for Chile in general.Pastel de Choclo's Recipe (Taken from the Chicago Tribune):1 Chicken breast, skinned and bonned8 oz Hambuerger meat, extra lean1/4 tablespoon Salt1/4 tablespoon Black Pepper1/2 cup Raisins2 tablespoons Klmata Olives; chopped1/2 tablespoon Canola oil1/8 tablespoon Paprika1 Medium onion, finely chopped16 oz Corn kernels; thawed1/2 cup Non-fat milk3/4 teaspoon Cumin, ground1. Heat oven to 400 degrees. Spray skillet with non-stick vegetable spray; place over medium heat until hot. Cook chicken breast 2 minutes on each side. Remove from skillet, set aside. 2. Put beef in same skillet; cook, stirring constantly, until no longer pink. Stir in salt, pepper, raisins and olives. Spoon ¼ of mixture into each of 4 small, oven-proof bowls or one 8X8 inch baking dish. Cut cooked chicken...
