Ma Cuisine is a restaurant that is set in the front room of the owners Kabet (an open sided home), its very homely, with lovely darkwood floors and roof, and locally crafted chairs and artifacts for you to look at whilst your eating.
You have to book in advance, otherwise the place will be shut, but they will open for 2 people, so don't feel like you're putting them out!!
Favorite Dish: There is no menu in this restaurant, you will be given salad and starters and the main course is usually a mixture of whatever was caught in the jungle that day, from armadillo to tapir and everything in between. The chef is from france and his wife is local, the combination of cooking styles really works and the food is very very good, they also have some local rums to try, the digestive rum at the end has hardwood in it (quite literally - aimed at the men, drink in moderation to avoid tents in pants).

Chez 'D's is basically a hut in the middle of the bourg village, everything on the menu is 1 Euro 60, the only food he serves is brochettes. You basically get a choice of 5 different kebabs, of which you can have as many as you like, write it on a bit of paper, give it to the waiter and wait what comes out. (whilst having a local 't punch', local 50% rum with sugar water and lime).
You won't be disappointed, the food is fresh everyday and he is only open from 7pm mon-sat, the atmosphere is the best in town, but if you go there on a weekend, get there early or you'll be disappointed.
Favorite Dish: The Brochettes (kebabs) - there isn't anything else!

I visited French Guyana for a weeks work for the European Space Agency. Great Country and very laid back, good for jungle exploration if you get the chance, a must for the exploring tourist.
