"Tushpa" means the place where food is made on 4 stones. Nowadays the food is made there in more modern ways, but the taste is the same, I suppose. The beefs are offered to the tables in a small grill, too.
Favorite Dish: Excellent grill food, my favorite is portion made from the dry meat, "adebo de cerdo".
Cecina is probably the most traditional food in the Amazon area and as such could not be bypassed in Chachapoyas. Go to the mercado and watch them prepare it. Im peruvian, and I was surprised by the variety found here: Paiche, vaca, chancho, pretty much everything you can imagine, except vegetarian, sorry. Oh! dont forget the juanes also, which in Chachapoyas are made with yuca, ummm, delicious
