    Mondogo ayacuchano

    Favorite thing: Try this local Ayacucho dish. It is mostly served on Sundays but you may find it another day. It's a hearty soup of white corn and pork meat.
    It looks gross with bits of fat and skin still with some hairs on but it tastes great!
    Just push the yucky bits on one side and enjoy the broth, corn and meaty bits. Very very nourishing and mega cheap.

    Wikipedia says it's made of tripes but I know the texture of tripe and it was not that, unless that what the fatty bits were. Mystery!

    I have found this recipe on the web. My Spanish is not that good so if any one can translate it, I'd be very grateful:
    Mondongo ayacuchano

    Primero pelar el maíz y dejar remojar de un día para otro. Luego, al día siguiente, sancochar las patas de carnero y vaca, además de la cabeza de carnero y el mondongo de la vaca. Para el aderezo de la sopa emplear ajo, comino, orégano, sal y cebolla picada.

    En vilcashuaman se utiliza papas como la retipa sisan (conocida como papa negra con ojitos), el cascaron (papa que solo se cosecha una vez al año en vilcashuaman) o yurac sisan (para arenosa).

    Favorite thing: Ayacucho is great. A little bit off of the tourist route, the people are genuine and sincere.
    There are parades almost every day.
    There are bull fights on sunday.

    Fondest memory: Nice people.
