Before I got to LA and didn't have that much exposure to Mexican food this was one of my favourite restaurants in Amsterdam.
It offers, when taking into considerations the availability of Mexican food in Amsterdam, a very wide menu and tasty food. They also have a full bar and it's actually a good place even for just a few drinks after work.
Since it is not a too famous of a restaurant, you get a mixed crowd of tourists, expats and mostly locals.
Of course after I got to LA and was introduced to authentic Mexican kitchen I realized the menu at Rose's Cantina is somewhat limited, and the spices you found there are not as good as what you get in LA. However, like I said considering the alternative this is a good Mexican restaurant in Amsterdam :)
Definately Rose's Cantina for the Mexican Food
For Surinam/Chinese food I go to Kam Yin, which is more like a toko/restaurant.
Also there are more and very good restaurants, but these are my favourites =)
Indonesian/Javaans food...well than I just go to my mum or grandma...*cackle* ;oP
Both restaurants are fairly busy and sometimes it is just 2 crowded, but you will certainly enjoy.
Rose's Cantina is more a restaurant where you go with your love on your first date [I did] or with your friends and listen to the Latina musica...sweeet
Kam Yin is also a Take Away and is a cheap place to eat, so if you are on a budget and want to enjoy great food...this is the place.
Favorite Dish @ Rose's Cantina I just like everything, well except for any seafood dishes...cuz I don't like seafood, well maybe shrimp is nice =)

Rose's Cantina is one of many restaurants at the Reguliersdwarsstraat.
It looks like a small place, but it's long and has a backside garden terrace.
Any Mexican classic fooditem is on the menu; don't expect to eat European-art here.
Mo-Th: 5PM - 10.30PM
Fr-Su: 5PM - 11Pm
Bar hours Fr-Sa till 2AM.
Favorite Dish The dessert: Frutas del Tiempo with cream (to cool you down)
